Note: In my experience, if you can’t find plum tomatoes, you can use regular tomatoes and add dried golden grapes (not regular ones, completely different taste!) to the beef shanks. They impart a nice, subtle sweet flavor to it and they also plump up with the juices, giving a nice burst of flavor when you bite into them.
